
A colorful salad full of nutrient-dense carbohydrates and grilled chicken with a home-made balsamic vinaigrette.
This is about 2 cups of spinach with 1/2 cup of strawberries and roughly 5-6 ounces of chicken. (and yes its all for 1 person…me!) I make a home-made balsamic vinaigrette with olive oil, balsamic vinegar, Dijon mustard, and a small amount of honey. We grill a big batch of chicken and beef every week and keep a supply of protein in the fridge at all times so making Zone/Paleo meals is a snap. This salad took me less than 5 minutes start to finish.
This is one of my favorite lunches of all time…its like lunch and dessert all in one with the strawberries. Yummmm.


Hey Heather, my husband knows Wade through ministry stuff & I’ve wondered upon your website….it’s fascinating & great! I’ve thought about grilling a bunch of chicken like you mentioned but didn’t know how long it would last in the frig before drying out or maybe not tasting great. Its great to hear from you. Funny you should ask…Wade is grilling right now in fact. We prefer dark meat and usually cook skinless thighs and drumsticks for the kids. We find that it will last about 5 days in the fridge (its usually eaten by then anyway.) We like Fiesta Fajita Chicken seasoning with no MSG and no salt. Best of luck in your efforts. Great question! You’ve forced me back to the kitchen to actually measure =) I make this dressing and then just use a Tablespoon at a time and keep the rest in the fridge.
1/3 cup of olive oil
3 Tblsp of Balsamic vinegar
1 tsp Dijon mustard
1 tsp honey
You can make it more tart or more sweet by adjusting the vinegar and honey. Be careful not to add too much honey as it adds unnecessary carbs. Enjoy!
